I'm willing to bet that your grandmother and great-grandmother are very familiar with canning. Long before we had grocery stores that offered food with preservatives, most families canned food from their own properties and traded those canned foods with their neighbors. Recently, canning has come again to the forefront because so many people are starting backyard gardens to avoid the pesticides in many of our foods. Since harvesting fruits and vegetables often comes all at once, canning makes perfect sense so that none of that delicious homegrown food is wasted. Canning can be intimidating if you've never tried it, but it's really not that difficult. I recently received the Preservation Society Home Preserves book by Camilla Wynne and it's filled with 100 modern recipes for preserving foods. Not only is the author knowledgeable and creative with her recipes, she is also a wonderful author. I loved reading her personal little stories throughout the book.The Preservation Society Home Preserves book covers so much more than just making jam. There are some fabulous jam recipes, but there are also recipes for jellies, butters, canned fruits, syrups, pickles, chutneys, relishes and more. The book begins with the basics of preserving, followed by Camilla's creative recipes, and concludes with how to cook with preserves. The book is loaded with gorgeous full-color photos too. You'll learn how easy it is to make Apricot Jam with Honey and Chamomile, Brown Butter Apple Butter, Pickled Poblano Peppers, and Red Currant Syrup. Be sure to try the Marmgarita, a marmalade based on the classic cocktail. I can hardly wait to harvest my garden veggies and fruits, so I can get canning with Camilla's recipes this summer!
