Did you know that honey never spoils? Archaeologists once found 2000 year old honey in Egyptian tombs and it still tasted delicious! I love honey as a sweetener, as a topping, and as a recipe ingredient. I received some Golden Blossom Honey for review and it's absolutely incredible. Golden Blossom has the largest collection of honey recipes I've ever seen! Their Banana Loaf recipe caught my eye, but I didn't have the allspice or ginger in my pantry, so I modified it just a bit:
Banana Bread Recipe
Ingredients
1 Tablespoon lemon juice
3 cups flour
2 teaspoons baking powder
1 teaspoon baking soda
1 teaspoon ground cinnamon
1 cup GOLDEN BLOSSOM HONEY
1 cup sugar
1 cup mashed banana (2 medium bananas)
3 eggs
3/4 cup vegetable oil
1/2 cup cold coffee
Directions
Grease and lightly flour two 9 x 5 x 3 inch loaf pans. In a small mixing bowl stir together flour, baking powder, baking soda, and cinnamon. In a large mixing bowl combine honey, sugar, banana, eggs, oil, coffee and lemon juice. Beat with an electric mixer on low speed until thoroughly blended. Add flour mixture to wet ingredients and beat on low until blended. Pour batter into prepared pans and bake in a 350° oven 40 to 45 minutes or until cake tester comes out clean. Cool bread on wire rack for 10 minutes. Remove bread from pan and cool completely on wire rack. Makes 2 loaves.
My Banana Bread turned out delicious! To make it even more heavenly, I slathered my slice of the banana bread with some butter and drizzled more Golden Blossom Honey on it.
