Coconut Juice-Infused Rice #Recipe

I love a recipe challenge! I received one can of Amy and Brian Coconut Juice with a challenge to recreate one of three holiday recipes. I chose the Coconut Juice-Infused Rice recipe. Since I never have on hand all the ingredients called for in a recipe, I modified the original recipe from thediva-dish.com so I could avoid the grocery store. It turned out delicious and I wanted to share it with you.
Coconut Juice-Infused Rice Recipe
In a saucepan, combine 8 oz Amy and Brian Coconut Juice with 1/2 tsp salt and 1/2 tsp sugar.
Bring to a boil and add 1/2 cup instant brown rice, stir well, cover with lid.
Simmer 5-10 minutes, until liquid is absorbed.
Remove from heat and let sit without stirring, with lid on for 5-10 minutes.
Stir rice with fork to fluff and add about 1 tbsp of fresh cilantro, chopped.
Serve hot. Enough for two as a side. Recipe can be doubled.
