This week's recipe is:
Roasted Veggie Egg Scramble
In a hot stove-top skillet, add 1/4 cup of diced onion and 1/4 cup of diced green pepper. Heat veggies until they begin to brown on the edges. Crack three eggs without breaking the yolk and pour the eggs on top of the roasted veggies in the skillet. Sprinkle with a bit of salt and pepper. Just as yolks begin to firm up, poke with fork to allow yolk to run. Stir gently and flip gently. When eggs are fully cooked, slide to plate, top with shredded cheese and some salsa.
