This week's recipe is:
Preheat oven to 400 degrees F.
Peel, pit, and dice three small nectarines.
In a mixing bowl, toss nectarines with 3 tsp of lemon juice.
In another bowl, combine 1 3/4 c flour, 1/2 c light brown sugar,
2 tsp baking powder, 1 tsp cinnamon, and 1/4 tsp salt.
In another bowl, mix 1/2 c melted butter, 1 egg, and 1/4 c milk.
Pour wet mixture into flour mixture and blend until moist.
Add the diced nectarines and fold gently into the batter.
Fill a 12-muffin tin with muffin papers and scoop batter into the muffin cups evenly.
Sprinkle the top of each muffin with cinnamon sugar.
Bake in 400 degrees F oven for 25 minutes.
Cool slightly, serve warm or at room temperature.
Store any leftovers in a sealed container.
