Vegan Mango Cake Recipe

Vegan Mango Cake
- an original Lisa Weidknecht recipe -

Chop one large mango into small pieces, dump in big bowl. Chop up four small apricots, dump in same bowl. Break up two bananas into same bowl. Using mixer on low speed, puree into a thick sauce.
In a separate small bowl, mix 1 tsp cinnamon, 2 tsp baking soda, 1/4 tsp sea salt. Pour dry mix into the bowl of fruit puree, then add 1/4 cup orange juice, 1 1/3 cup of pure cane sugar, 1 tsp vanilla extract, and 2 cups of whole wheat flour. Use mixer to blend all ingredients well.
Pour into 9"x13" metal pan, let set while preheating oven. Preheat oven to 350 degrees F, then bake mango cake 45-50 minutes or until toothpick inserted in center comes out clean.
Cool on wire rack one hour. Cut into small squares and enjoy. They came out really good and my husband, my two teenage boys, and I all like them.

  4. Oh YUM! Mangoes are so delicious and so healthy ... of course, so are the other fruits. This looks easy and the finished product is making my mouth water! :-) Thanks for sharing the recipe!

  7. That sure looks tasty. Is it possible or does it go well with chocolate? Like a drizzle of chocolate on top or chocolate melt on top? Just wondering.
