Idahoan Quatro Queso Soup #Recipe and #Giveaway

Does your family love mashed potatoes? Mine does, but I hate all the work that goes into making them, so I don't make them very often. Have you ever tried Idahoan mashed potatoes? I had never tried them, so I was really excited when I received 20 pouches of assorted flavors to try! Besides their original Idohoan mashed potatoes, they also make Idahoan Flavored Mashed in loaded baked, four cheese, roasted garlic, and baby reds.
The Idahoan Story: Idahoan is a grower-owned company in Eastern Idaho which began over 50 years ago. Idahoan uses 100% Idaho potatoes in all of its products. The rich, volcanic soil, warm days, cool nights and mountain water from the area offer the perfect conditions for growing high-quality potatoes. Idahoan uses a proprietary one-pass process in dehydrating these potatoes which allows them to retain the authentic, homemade taste and texture without the hassle of washing, peeling, boiling and mashing. In fact, families can enjoy our mashed potatoes in as little as 4 minutes. Simply put, Idahoan is in the business of making lives easier.
I made the Idahoan Roasted Garlic potatoes and they are absolutely delicious! Idahoan tastes just like homemade mashed potatoes, but it was SO much easier to make. In just a couple of minutes, my Idahoan mashed potatoes were ready to eat. My family loves them and I will definitely be choosing Idahoan from now on. Quatro Queso Soup Recipe from Idahoan

Ingredients
1 4-oz package of Idahoan® Four Cheese Flavored Mashed Potatoes, dry
1 32-oz package low sodium chicken broth*
1 10-oz can Rotel diced tomatoes with chilies
1 cup shredded Mexican cheese
*This ingredient may contain gluten. If you’re targeting a gluten-free recipe option, make sure to check the label.

Instructions
Heat chicken broth to a high simmer.
Stir in dry Idahoan Four Cheese Mashed Potatoes and reduce to a low simmer.
Add Rotel tomatoes with chilies and heat thoroughly.
Stir in shredded cheese just before serving.
Serves: 4

My thoughts? This is absolutely delicious! It's the perfect comfort food for a cold day.
