Shepherd's Pie
featuring Allen's Veg-All Mixed Vegetables
In a skillet, brown one pound of ground beef. Add 1/4 cup diced onion's, 3 tablespoons Worcestershire sauce, 1/2 tsp salt, 1/2 tsp black pepper. When beef is browned, remove from stove top, drain and rinse ground beef. Return ground beef to pan (do not put on stove). Open two cans of Allen's Veg-All and drain the liquid from the cans, then toss the vegetables with the ground beef. Spray the bottom of a casserole dish with nonstick spray, then spread the beef and veggie mixture across the bottom of the casserole dish. In a saucepan, prepare mashed potatoes (I used box mashed potato flakes because it's faster), then spread the mashed potatoes over the top of the beef veggie layer. Then prepare a gravy to cover the mashed potato layer (I used whisk bliss and added a beef bullion cube and some black pepper to the gravy). Then cover the casserole dish with foil and bake in the oven for 30 minutes. Serve warm. It will easily serve six people. I stored leftovers in my fridge in the casserole pan covered with foil and reheated single servings for 2.5 minutes in the microwave. Absolutely delicious!!!

  3. My Honey/Hubby loves Shepherd Pies - When he was growing up it was the ultimate COMFORT FOOD in his home. Now I love it too. Your recipe looks delicious and sounds a lot easier than the one I use (a VERY modified/simplified version of the old family recipe given to me by Hubby's Mom.)

    My Mom-in-Law made her's using leftover roasted LAMB (and it IS divine!) In my version - I use Ground Lamb. Unless you are one of those people who really hate lamb - you should try it. I find it so much more flavorful than the ground beef.

    But in anycase, I'm going to try yours (and Bonnie's) recipe - (using ground lamb) I'm must say that I have never made it using the canned (Allen's Veg-All) vegetables... but boy it sure looks good and would REALLY makes this a fast, easy and convenient! I'll let you know.
