This week's recipe is:
Loaded Baked Potato Casserole
Put six medium potatoes in a pot of salted water and bring to a boil. Reduce to simmer for 30 minutes. Cool potatoes on a paper towel, then cut into bite-size pieces. Preheat oven to 350 degrees F. In a medium bowl, toss potato pieces with 1/2 cup bacon pieces. In a large bowl, mix together: 2 cups shredded cheese, 1 can condensed fiesta cheese soup, 1 cup milk, 1 cup mayonnaise, 1/2 cup diced onions, 1/2 cup salsa, 1 tablespoon minced chives, 2 teaspoons salt, and 2 teaspoons black pepper. 
Gently fold potato pieces and bacon pieces into the large bowl. Lightly oil the bottom of a baking dish then dump in all the mixed ingredients. Cover with aluminum foil and bake for one hour. Perfect as a side dish or even as the entree!
