Disclosure: I received product at no charge in exchange for this post.Pork Rinds from Southern Recipe are not just for snacking. With a bit of imagination and creativity, they also make fabulous seasonings and toppings. In our never-ending quest to eat healthy while still enjoying what we eat, I created a recipe called Pork Rinds Crusty Veggies and they turned out so delicious, I decided to share with you!
Take one bag of Sweet BBQ Pork Rinds and dump the entire bag into a plastic zipper bag. Make sure it zips closed completely!
Take a rolling pin and smash all the pork rinds into a crispy, crunchy, chunky mess.
Add one tablespoon of extra virgin olive oil and toss in some
fresh or frozen broccoli/cauliflower mix. (I used frozen.)
Mix all the ingredients in the plastic zipper bag until the veggies are coated.
Bake uncovered in the oven at 350 degrees F for 30 minutes.
It's a delicious and tricky way to get your family to eat more vegetables!
You could probably do this with just about any veggie.
