Maple Oatmeal Mini Muffins

In an effort to get my family to eat more oatmeal, I'm excited that Quaker Perfect Portions Maple Oatmeal comes in a bag. It's so easy to scoop out the right amount with a measuring cup. These Maple Oatmeal Mini Muffins turned out delicious!
What you'll need:
- 1 cup Quaker Perfect Portions Maple Oatmeal
- 1 cup milk
- 1 egg
- 1/4 cup extra virgin olive oil
- 1 cup flour
- 1/3 cup sugar
- 1/2 tsp salt
- 3 tsp baking powder
First combine the cup of milk with the cup of Quaker Oatmeal with a spoon. I used a two cup measuring cup to eliminate the need for a bowl. Set aside for about ten minutes. Preheat oven to 425 degrees.
(Here's where I completely forgot to take photos!) In a large bowl, combine the flour, sugar, salt and baking powder with a fork. Add the egg and olive oil to the dry ingredients and stir. Then add the oatmeal mixture and stir again. Fill mini muffin pan with batter.
Bake at 425 degrees F for 20 minutes. Cool on wire rack, then carefully remove muffins to plate. Enjoy warm!
